Pure honeydew fruit lifted by delicate pink grapefruit skin aromas on a steely, saline frame of 100% melon de Bourgogne from our vineyard in PEC. Tank fermented and aged sur lie with light battonage. Crunchy élevage of 8 months. Indigenous yeasts, low sulfur, unfined, unfiltered. 11.5% alc./vol.
